Preparation:
Cut the tops off the bell peppers and remove the seeds and membranes.
Lightly spray the outside of the peppers with olive oil.
Prepare the Filling:
In a mixing bowl, combine cooked rice, ground beef or turkey, black beans, corn, diced tomato, half of the shredded cheese, cumin powder, chili powder, garlic powder, salt, and black pepper. Mix well.
Stuff the Peppers:
Fill each bell pepper with the prepared mixture, pressing lightly to pack it in.
Sprinkle the remaining shredded cheese on top of each stuffed pepper.
Preheat the Air Fryer:
Set the air fryer to 360°F (180°C) and preheat for 3 minutes.
Cooking the Peppers:
Arrange the stuffed peppers in the air fryer basket, standing upright.
Cook for 12-15 minutes until the peppers are tender, and the cheese is melted and slightly browned.
Cooling:
Allow the stuffed peppers to cool for 5 minutes before serving.
Serve:
Garnish with fresh cilantro, a dollop of sour cream, or a drizzle of hot sauce, and serve warm.
